A spin on an Italian classic - grilled chicken breast marinated in Litehouse® Lite Honey Dijon and served on a bed of romaine and Litehouse® Freeze Dried Basil. Topped with crispy panceta, fresh mozzarella, dried cranberries, grape tomatoes and a slice of grilled ciabatta bread. Grilled Marinated Chicken Procedures
1 lbs Chicken Breast Boneless
3 oz Vegetable Oil

5 ozGrilled Chicken Sliced
6 ozRomaine Shredded
1 ozPancetta Crispy
1 ozCranberry Dried
2 ozGrape Tomato Halved
2 ozFresh Mozzarella Ciliegine, halved
1 eaCiabatta Bread Grilled
1 tspBasil


Grilled Marinated Chicken Procedures: Marinate the chicken overnight with the Lite Honey Dijon and the vegetable oil. Place the marinated chicken on char grill, 2 minutes per side. Set oven to 350° F. Finish the chicken in then oven, 5 to 8 minutes, or until internal temperature of 165° F. Let the chicken cool in the refrigerator until chicken reaches an internal temperature of 38° F.
Place the shredded romaine in the bowl.
Place the grape tomatoes, crispy pancetta, dried cranberry, and fresh mozzarella evenly around the romaine lettuce.Place the grilled chicken in center of salad base.Drizzle the dressing in circular pattern.Place the grilled ciabatta bread 7o'clock on the plate.
