Korean Kimchi Burger

Two hand-formed burger patties, stacked with American cheese and Kimchi on a potato roll with savory bacon jam and spicy chipotle aioli.

BURGER SPICE BLEND, SUB RECIPE
½ tspGround Black Pepper
1 tspKosher Salt
1 tspBrown Sugar
1 tspGarlic
1 tspOnion Granulated
1 tspCumin
1 tspChili Powder
½ tspDry Mustard
BACON JAM, SUB RECIPE OR PURCHASE
1 tbspButter
3 ozBacon Chopped
1 ozSweet Onion Small diced
1 tspGarlic
1 tspBrown Sugar
1 tspMaple Syrup
1 tspApple Cider Vinegar
½ tspChili Powder
SPICY MAYONNAISE, SUB RECIPE
2 ozChipotle Aioli
1 tspSiracha
1 tspFresh Cilantro Chopped

Directions

BURGER SPICE SEASONING
Mix all ingredients until evenly blended, then place in the spice shaker and use for service.
BACON JAM
On MEDIUM-HIGH heat melt the butter in the small sauce pan.
Sauté the chopped bacon and onions until fat is rendered out and mix starts caramelizing - about 5-8 minutes.Deglaze with the vinegar and let cook for 30 seconds .Add in the remaining ingredients and cook until jam like texture forms.Place in sealed container and serve accordingly.
SPICY MAYO
Mix all ingredients until evenly blended and use for service.
KIMCHI
Place the cole slaw mix in bowl and fold in salt. Cover the cole slaw mix and salt with warm water, place the weight from the top on the mix to ensure everything is submerged. Let the mixture stand for 2-6 hours at room temp.
Mix the rest of the ingredients in a bowl to create the marinade.Drain the cole slaw mix and toss in the marinade. Let the tossed cole slaw sit overnight, then use for service.
KOREAN KIMCHI BURGER
Season the burger patties on both sides and place on the grill or flat top. Cook each burger patty 3-4 minutes per side until burger patties are cooked through.
Place the potato bun in the vertical toaster or flat top. Place the toasted sides of the roll up on the plate or packaging.Place the bacon jam on the top bun.Place the spicy mayo on the bottom bun.When the patties are cooked to the appropriate temperature, top each patty with one slice of the American cheese. Place the kimchi on one patty and top with the other patty, then place burgers on the spicy mayo.Top with the top bun and serve.
