Grilled Caesar Salad with Grilled Shrimp

Caesar salad lightly charred on grill served with grilled shrimp and drizzled with Litehouse® Caesar dressing.

Ingredients

Grilled Shrimp Procedure
4 ozShrimp 16/20, peeled and veined
½ tspSalt
½ tspPepper
½ tbspCajun Seasoning
Ciabatta Crouton Procedure
5 eaCiabatta Bread Cut into 1/2" squares
1 tbspOlive Oil
½ tspSalt
½ tspPepper
Salad Build
1 eaRomaine Heart Halved and grilled
4 ozShrimp Grilled
2 tbspParmesan Cheese Shaved
5 eaCiabatta Croutons
¼ cupCherry Tomatoes Grilled

Directions

Turn on the grill to MEDIUM-HIGH heat. Brush the 2 halves of the Romaine heart with the olive oil and place the halves cut side down on the pre-heated grill. Grill the halves for 1 minute, or until grill marks form. Set the grilled halves aside. Place the cherry tomatoes and the shrimp on the grill. After 3 minutes, move the cherry tomatoes around to char them on all sides. Flip the shrimp over, and continue to grill the cherry tomatoes and shrimp for 2-3 minutes, or until done. Set aside.
Salad Build
Take the grilled romaine halves and separate the larger outer leaves from the smaller inner leaves. Place the larger outer leaves towards the outer rim of a plate; then place the smaller inner leaves on top of the larger leaves towards the center of the plate.
Spread the grilled shrimp, croutons, grilled cherry tomatoes, and parmesan cheese on top of the lettuce.Drizzle the Litehouse® Caesar dressing on top of the salad and serve.
