Thai Tuna Burger

Flavor-packed Thai tuna burger served with ginger-lemon dressing, a fresh slaw tossed in Litehouse® Sesame Ginger dressing, arugula, and chopped cashews on a Hawaiian bun.

Ingredients

4 eaEnglish Cucumber 1/2" sliced
¼ ozRed Onion Julienned
1 eaHawaiian Bun
½ cupArugula
1 tbspCashews Toasted & chopped
½ tspCilantro
½ tspLemon Juice Fresh
TUNA PATTY, SUB RECIPE
½ tspCilantro
½ tspBasil
½ tspGarlic
3 ozTuna, Sushi Quality 3/8" diced
½ tspFish Sauce
½ tspSerrano Pepper Small diced
½ tspGinger Fresh grated
½ tspMirin
½ tspKosher Salt

Directions

GINGER LEMON MAYO
Mix all the ingredients in small bowl, then place on line for service.
TUNA PATTY
Mix all the ingredients except Tuna in small bowl, then add tuna and form into patty.
THAI TUNA BURGER PROCEDURES
Place the tuna patty on the grill or flat top and base with the Thai Satay Dressing. Cook the tuna patty 3-6 minutes per side until appropriate temp is reached.
Toast the Hawaiian bun in the vertical toaster or flat top. Place the toasted sides of the bun up on the plate or packaging.Spread the lemon mayonnaise on the toasted side of the top and bottom bun.Spread the chopped cashews on the mayo top bun.Place the cucumber on the mayonnaise bottom bun.Place the arugula on the cucumber.Place the onion on the cashews.Place the tuna patty on the arugula. Serve the burger open face or top with bun.
