2 ozSauteed Peppers & Onions, Sub Recipe
BURGER SPICE BLEND, SUB RECIPE
½ ozGround Black Pepper
1 tspKosher Salt
1 tspBrown Sugar
1 tspGarlic
1 tspOnion Granulated
1 tspCumin
1 tspChili Powder
½ tspDry Mustard
SAUTEED PEPPERS & ONIONS, SUB RECIPE
2 ozSweet Onion Sliced
½ ozJalapeno Pepper Diced
½ ozOlive Oil
1 ozLitehouse® Salsa

Directions

BURGER SPICE SEASONING
Mix all ingredients until evenly blended, then place in the spice shaker and use for service.
SAUTEED PEPPERS & ONIONS
Heat the olive oil in the sauce pan on MEDIUM-HEAT, then add the onion and the jalapeno with a pinch of Kosher salt.
Once the onion pepper mix starts to caramelize, add the salsa sauce and cook on LOW-HEAT. Cook the salsa for 3-5 minutes or until the salsa has reduced by one-third. Place the sauteed peppers & onions on the line for service.Spread the Polynesian sauce on the toasted side of both the top and bottom buns.
ROASTED RED PEPPER MAYONNAISE
Place all the ingredients in a food processor and pulse for 20 seconds or until mayonnaise has a smooth texture. Pour in the squeeze bottle or place in cold pan for service.
SOUTHWEST CHORIZO BURGER
Fold together the ground chuck, chorizo, adobe and cilantro until everything is evenly mixed, then form into patties. Store the patties in the refrigerator for 2 to 6 hours before service.
Season the burger on both sides and place on the grill or flat top. Cook the burger patty until it has an internal temp 165°F, about 5 minutes per side.Place the potato roll in the vertical toaster or flat top. Place the toasted sides of the roll up on the plate or packaging.Spread the red pepper mayonnaise on the toasted top and bottom bun.Once the burger patty is cooked, place the pepper mix on the burger patty and top it with the chipotle jack cheese. Cover with a lid or place under broiler to melt the cheese.The burger can be served open face or topped with the top bun.
