Loaded Tailgate Burger

The loaded burger perfect for any big game celebration - a steak patty on a bed of fried onions, topped with cheddar cheese, bratwurst and cole slaw. Served between a pretzel bun with a signature  wing spread.

Ingredients

3 ozSteak Burger
1 tbspBurger Seasoning Blend, Sub Recipe
1 eaPretzel Bun
2 ozFried Onion Straws
1 eaBratwurst Cooked Cut In Half
2 ozWing Spread, Sub Recipe
1 eaCheddar Cheese
2 ozCole Slaw Mix, Sub Recipe
BURGER SPICE BLEND, SUB RECIPE
½ tspGround Black Pepper
1 tspKosher Salt
1 tspBrown Sugar
1 tspGarlic
1 tspOnion Granulated
1 tspCumin
1 tspChili Powder
½ tspDry Mustard
COLE SLAW MIX, SUB RECIPE
2 ozCabbage and Carrot Shredded Mix

Directions

BURGER SPICE SEASONING
Mix all ingredients until evenly blended, then place in the spice shaker and use for service.
WING SPREAD
Mix the wing sauce and fry sauce in the bowl until evenly blended, then set on the kitchen line for service.
COLE SLAW MIX
Place the cole slaw mix in bowl and fold in salt. Cover the cole slaw mix and salt with warm water, place the weight from the top on the mix to ensure everything is submerged. Let the mixture stand for at least 2 hours at room temperature.
Drain the water from the cole slaw mix, then fold in the dressing until evenly mixed. Place the cole slaw in the refrigerator for service.
LOADED TAILGATE BURGER PROCEDURES
Season the steak burger on both sides and place on the grill or flat top. Cook the burger patty 3-6 minutes on per side until appropriate temp is reached: Rare: 120-125°F, 3 minutes per side; Medium Rare: 130-135°F, 4 minutes; Medium: 140-145°F, 5 minutes per side; Medium Well: 150-155°F, 6 minutes per side.
Cut the pretzel roll in half and toast in vertical toaster or flat top. Place the toasted sides of the roll up on the plate or packagingSpread the wing sauce on the toasted top and bottom bun.Place the fried onions on the bottom bun.Top the cooked burger patty with cheddar cheese, then place under heat or cover to melt cheese.Top the cooked burger and melted cheese with the bratwurst.Top the bratwurst with the coleslaw mix.Serve the burger open face or topped with the top bun.
