Homestyle Ranch and Idaho® Potato Soup

Hearty Red Potato soup served with bacon, cheddar cheese and green onions. Drizzled with Bacon Ranch Dressing.

Ingredients

10 lbsIdaho® Red Potatoes
2 lbsBacon Chopped
½ cupGarlic Chopped
¼ cupChives Chopped
4 tbspSalt
5 tbspGround Black Pepper
1 qtWater
2 qtMilk
2 qtHeavy Whipping Cream
6 lbsMashed Potatoes
3 lbsCheddar Cheese Shredded
12 ozPeppered Bacon Ranch

Directions

Using a cutting board, make sure red potatoes are washed and then cut in half creating 2 equal halves. Cut those halves in half again lengthwise creating quarters. Cut the quarters into ¼” ¼ moons and place into a bowl of water. (This will reduce oxidation.)Once all potatoes are cut drain and place in boiling water and cook only halfway just to start to soften, about 5 minutes.On a clean cutting board dice all the bacon. Using a large stock pot on MEDIUM-HIGH heat, cook the bacon in the pot. (Leaving all renderings in the pot will add flavor.) Once the bacon is fully cooked and becoming golden brown and crispy add the garlic. Let the garlic cook for 2 minutes or until browning starts to occur. Place the potatoes, chives, salt, and pepper into the stock pot and mix with the bacon and garlic. Let cook for 2 minutes. Do not burn - make sure to watch the heat. Adjust if needed.Add in water, milk and, heavy cream and whisk well.Add in the mashed potatoes and cheese whisk until all the mashed potatoes have dispersed into the soup and cheese is completely melted. (The cheese will stick to the bottom of pot and burn if not completely whisked.)Turn heat to MEDIUM and let the soup steep until texture is velvety and smooth, around 20 minutes. Whisk frequently. Once the soup is completely cooled, whisk in the ranch dressing. If using immediately after being cooked add in the ranch as the last step before serving.
