Classic Cobb Salad
2 eaThick Cut Bacon Chopped
2 eaHard Boiled Egg Cut into wedges
4 ozChicken Breast Grilled and chopped
½ eaAvocado Peeled, pitted and diced
6 ozBibb Lettuce Chopped
¼ eaRed Onion Sliced
¼ cupGrape Tomato Halved
2 ozBlue Cheese Crumbled
DirectionsPreheat the oven to 400°F. Preheat the grill MEDIUM-HIGH.Place the bacon on a baking sheet. Place the baking sheet in the oven and cook for 18-20 minutes, or until it reaches desired crispiness. Remove the bacon from the oven, cool, chop and set aside.Season the chicken on both sides with salt and pepper. Place the chicken on the grill, and cook for 8 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken from the grill, cool, chop and then set aside.
Salad Build On a plate, add the chopped bibb lettuce.On the far upper left side of the plate, place the egg wedges in roughly the shape of a line from the top toward the bottom of the plate. To the right of the egg wedges, repeat the same shape with the chopped bacon. Repeat this step working toward the right side of the plate with the crumbled blue cheese, then with the avocado, chicken, grape tomatoes and sliced red onion.Drizzle the plate with Litehouse® Red Wine Vineger with Olive Oil and serve.
