Chicken Bacon Avocado Chopped Salad

Grilled chicken marinated in Litehouse® Italian dressing, crispy chopped bacon, diced avocado with diced tomatoes, red grapes, cucumbers, red onion, kalamata olives, shredded colby cheese and basil on a bed of chopped romaine lettuce. Tossed with our Litehouse® Balsamic Dressing.

Grilled Marinated Chicken Procedure
1 lbs Chicken Breast Boneless
3 oz Vegetable Oil
Salad Build
4 ozMarinated Chicken Grilled
6 ozRomaine Lettuce Rough Chopped
1 ozBacon Chopped
1 ozRed Grapes Halved
1 ozRoma Tomato Diced
1 ozCucumber Diced
½ ozRed Onion Diced
2 ozAvocado Diced
1 ozColby Cheese Shredded
½ ozKalamata Olives Halved
1 tspBasil

Directions

Grilled Marinated Chicken Procedures: Marinate the chicken overnight with the Italian dressing and vegetable oil. Place the marinated chicken on char grill, 2 minutes per side. Set oven to 350° F. Finish the chicken in the oven, 5 to 8 minutes, or until internal temperature of 165° F. Let the chicken cool in the refrigerator until chicken reaches an internal temperature of 38° F.
SALAD BUILD
Place the romaine lettuce, chopped bacon, red grapes halved, diced roma tomatoes, diced cucumbers, dice avocado, shredded colby cheese, kalamata olive halved, and freeze dried basil in a stainless steel bowl. Add the dressing and toss.
Place the salad mix in bowl or plate.Top with the marinated grilled chicken and serve.
