Avo-Chipotle Burger

A fresh and flavorful avocado burger – a well-seasoned turkey patty served on a toasted potato bun with chipotle mayonnaise, cojita cheese, iceberg lettuce, and mashed avocado spread, layered with fresh onion rings.

4 ozGround Turkey
1 tbspMole Dry Seasoning
1 ozChipotle Mayonnaise
1 eaPotato Bun
1 ozCotija Cheese Crumbled
½ eaAvocado
½ tspCilantro
½ ozIceberg Lettuce
2 eaOnion Ring
1 tspKosher Salt
Burger Spice Blend, Sub Recipe
½ tspGround Black Pepper
1 tspKosher Salt
1 tspGarlic
1 tspOnion Granulated
1 tspCumin
1 tspChili Powder
½ tspDry Mustard


Mix all the ingredients until evenly blended, then place in the spice shaker and use for service.
Fold the cilantro, mole seasoning, and half of the kosher salt into the ground turkey until evenly mixed, then mold into 4oz. patties. Place the patties in the refrigerator for a minimum of 2 hours.
Mix the chipotle mayonnaise and cotija cheese until evenly mixed, then place on line for service.
Fold the diced avocado with the red wine olive oil vinaigrette until evenly mixed. Adjust the flavor of the mix with the kosher salt. Place the avocado mixture on the line for service.
Season the turkey burger on both sides and place on the grill or flat top. Cook the burger patty 6 minutes per side until appropriate temp is reached: 165° F.
Toast the potato bun in the vertical toaster or flat top. Place the toasted sides of the bun up on the plate or packaging.Place the chipotle spread on the bottom bun.Place the iceberg lettuce on the chipotle spread.Place the prepared burger patty on the iceberg lettuce.Place the smashed avocado on the burger patty.Place the onion rings on the smashed avocado. Serve the burger open face or closed with top bun.

1 tsp Kosher Salt
