Buffalo Chicken Ranch Salad

Garden spinach salad with spicy buffalo chicken and served with cooling Litehouse® Ranch Dressing.

Ingredients

4 ozChicken Breast Grilled
1 eaCarrot Shredded
1 eaCelery Chopped
1 eaShallot Thinly sliced
2 ozBlue Cheese Crumbled
¼ eaRadishes Thinly sliced
6 ozSpinach
3 eaRed Cabbage Whole leaves
3 ozBuffalo Ranch

Directions

Preheat the grill to MEDIUM-HIGH heat.Season the chicken on both sides with salt and pepper. Place the chicken on the grill, and cook for 8 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken from the grill, cool, slice and then set aside.
Salad Build
Place the Litehouse® Ranch dressing and Franks Red Hot sauce in a small bowl and mix until combined. Set aside.
Place the cabbage leaves down on a plate and top with the spinach.Place the sliced chicken on top of the spinach in the center of the plate. Set the radishes on each side of the chicken, and then place the carrots in the remaining spaces between the radishes around the chicken. Top the salad with the celery, shallots and blue cheese. Drizzle with the Litehouse® Ranch dressing mix and serve.
